Bacon Wednesday: Bacon, Cheddar and Raspberry English Muffins

English Muffin with Raspberry Jam, Cheddar Cheese and Bacon

The Chicks are now the proud gate keepers of three pallets of Elvis! Yes, the King has come to live at CRC World Headquarters by way of a souvenir vendor with a lot of overstock. We have coffee mugs, key chains, notepads, license plates, posters, lip balm, luggage tags and more.

I foresee a lot of Elvis in everyone’s Christmas stockings this year, but it’s available right now for our nonprofit partners who are having parties, Bingo games, neighborhood meetings or whatever.

In honor of Elvis, let’s have a little bacon. There’s no recipe to this, but it’s super yummy. Just toast an English muffin and butter it. Then top it with raspberry jam and shredded Cheddar cheese. Pop it under the broiler until the cheese melts and then crumble a strip of crisp bacon over the top of each muffin half. Salty and sweet – just like the Chicks.
